It's tex-mex night and I was so looking forward to this, but the blog is down. Anyone have the recipe?

INGREDIENTS
* 1/3 Cup Nutritional Yeast Flakes
* 1/4 Cup Flour
* 1/4 teaspoon Paprika
* 1 teaspoon Salt
* 1 teaspoon Ground Cumin
* Dash Garlic Powder
* Dash Chili Powder
* 1 Cup Water
* 2 Tablespoons Vegan Margarine
* 1 10-ounce Can RoTel (or any other Diced Tomatoes & Green Chilies, drained)
* 2 teaspoons prepared Yellow Mustard (Not Mustard seed or dijon, just regular yellow mustard...kay?)
DIRECTIONS
1. Combine all dry ingredients (everything from nooch to chili powder) in a pan
2. Add water to pan, turn on medium heat
3. Stir constantly and once thickened, remove from heat.
4. Add in margarine, rotel and mustard. Stir until margarine is melted.
5. Once margarine has melted, put the pan back on the heat and stir until a bit thicker.
6. Serve over chips, enchiladas or in a quesadilla with seitan and veggies.
7. Eat warm.

I'm relieved to see that it's an old thread Ha..
We really like it over pasta without the spicy elements ..tastes like velveeta and shells kinda. But nothing beats it in a big bowl with some chips and another bowl full of guac.. oh! and some beer,too [/drool]

I have to say, I really dislike uncheese and this is the only uncheesy thing I'll eat it's that good (plus my 3 kids love it which is a big bonus!)

its kinda of funny that i came up with a queso recipe almost exactly like this one before i ever knew about this one. the only difference is that ive never measured anything out and i use salsa instead of rotel

And by the way, anyone that can make this recipe without AT LEAST doubling it, you have the willpower of a saint! When I make a double batch, I'm lucky to get 3 chip dips worth, cuz the boyfriend eats it all before I can get to it.

I have not posted for ages, but have been reading.
I hope I am not treading on Crystal's toes but my top tip for the queso is instead of cooking it in a saucepan put the dry ingredients and water into a tupperware, blitz with a stick blender and then microwave for 30 seconds, stir and microwave again repeat until thick, add the other ingredients and stir. Far less stirring and it is far quicker. I find it really hard to get the lumps of flour out if I make it on the hob.

I finally made this the other night, and when reheating the leftovers yesterday an omni friend of mine declared that it was really tasty and she wouldn't have known it was vegan if I hadn't told her!

Thanks. Always wanted to try this recipe. All of the other fake cheeses kind of creep me out. They all seem like a cloned version of your dead dog who doesn't ask quite the same, but this one seems to make sense without having yet tried it. If you are from Texas I would imagine that this would be the hardest thing to give when you become vegan. I need my yum yums. I'm not vegan but this is definitely a pro for moving in that direction.

Making this tonight as friends are coming over to drink beer and watch Cruel Intentions. (How jealous are YOU?) So damn excited. Going to have to use, like, Doritos brand salsa instead of Rotel so hope that's not disgusting...
