"egg wash" substitute!

I just got a great bread book - 'Artisan bread in five minutes a day' (looks fantastic, by the way) and in it, I noted references to using a cornstarch slurry. turns out it makes breads SHINY on top when you brush it on.

"Using a fork, blend 1/2 teaspoon cornstarch with a small amount of water to form a paste. Add 1/2 cup water and whisk with the fork. Microwave or boil until mixture appears glassy, about 30 to 60 seconds on high. It will keep in the refrigerator for two weeks; discard if it has an off smell."

this was my first ever successful bread. this cookbook has easier recipes, but this one is lovely.

Nothing beats an egg for a egg wash. So if you can't plan ahead, have 4,5,6 shots of Brandy and then it won't make any difference what you use; tomato paste, mustard, ketchup, chocolate, cottage cheese. No brandy, no problem, you can substitute a few glasses of wine.

Will do, these are the stick shaped ones I made on the weekend (pretzel shaped ones were awkward), v.pale but yum!. We gobbled most of them straight away, oops!

This is what I use for brushing on bagels.  Though sometimes I'm lazy and just don't bother because the whole bagel process takes a lot of time...
