Any suggestions on making vegan cheesecake when tofutti better than cream cheese is not on hand. My birthday was thursday and my roommate made one with tofu, it was delicious, but not quite cheesecake. I was just curious if anyone had any suggestions as to how to make vegan cheesecake that tastes like it without the help of the wonderful tofutti (its hard to get when I'm at school). I know there are recipes online, but they are more custard-like than anything.

this recipe is *amazing.* i made it for a bunch of beefy law enforcement men and they even liked it.
this also adapts well for vegan quiche (omit sugar, zest, and extracts; add veggies & use a pie crust instead of graham cracker crust).
Lemon Tahini Cheesecake
2 cups graham cracker crumbs
1/4 cup maple syrup
1/4 tsp. almond extract
1 lb. Japanese-style firm silken tofu
1/3 cup sugar
1 Tbs. tahini or almond butter
1/2 tsp. salt
1 to 2 tsp. grated lemon zest
1/2 tsp. almond extract
1 Tbs. cornstarch dissolved in 2 Tbs. soy milk or rice milk
1. Crust: Preheat oven to 350 degrees. In medium bowl, mix cracker crumbs, syrup and extract until crumbs are moistened. Pour into oiled 9-inch pie plate; press mixture firmly to form crust. Bake 5 minutes; let cool while preparing the filling.
2. In food processor or blender, combine remaining ingredients and process until smooth, about 30 seconds. Pour mixture into crust. Bake until top is slightly browned, about 30 minutes. Cool and refrigerate until thoroughly chilled and firm, about 2 hours.

Hm. I was wondering if anyone had a non tofutti chilled cheesecake recipe? Like, a no-bake one. The non vegan one my mom makes is non bake and everyone loves it.
