Omlet

Yay for natural light during dinner! 

Presenting tonights dinner: Fatfreevegan omlet with mushrooms, nutritional yeast sauce and a variation of Julie's sausage

The cheese is your basic roux thickened nutritional yeast cheese with some ume plum vinegar added.  mmm, tangy.

Hickory Maple Breakfast Sausage

2 1/4 cups vital wheat gluten
1/2 cup nutritional yeast
1/4 cup chickpea flour
1 T. spike seasoning
2 T. Onion powder
1 t. black pepper
2 t. sage
1/2 t. ginger
1 t. nutmeg
1/2  t. Thyme
1 t. paprika
2 T maple syrup
2 t. maple extract
2 t. liquid smoke
2 cups water
2 T olive oil
2 T. soy sauce
4 cloves garlic

follow the directions for steamed seitan


Breakfast Kale

4 cloves garlic
1 lg potato
1 bunch kale
2 T. toasted sunflower seeds
1-2 T. Nutritional Yeast
Salt and Pepper to taste
Olive oil


Saute garlic and potato in olive oil until soft.  Add kale and cook until wilted.  Stir in nutro, salt and pepper.  Top with toasted sunflower seeds.

I've put off trying Julies sausage recipe because it looked a bit to spicy and have been to busy/lazy to come up with my own spice variation . Hubby hates spicy food, while I of course love it. But we both love anything Maple flavored so I think I am going to try your version today to use tomorrow for St. Patricks day with Colcannon and carrots with parsnips.
