I know there was a link posted here once for a mac n cheese recipe emulating the ubiquitous Kraft variety. However, after doing a search AND Googling, I haven't turned up with anything. I seem to have the vaguest recollection that the original recipe appeared on an LJ community. Can anyone help me out with the recipe or link?

If you find it, share! My husband is a die-hard fanatic of the Kraft macaroni and cheese. He'll eat Mac Daddy, but it just isn't "mac 'n cheese" to him!

i buy boxes of road's end mac n chreese. it's pretty yummy, but that super orange cheese flavor isn't very strong.

I've never tried that- could you use multiple "cheese" packets? Or would that just be weird?
Offline
you could, and i'm sure it would be awesome, but each box only comes with one packet of "cheese". but, you could always use the extra noodles for a different dish.

Thanks. I will have to try that. ![]()

That stuff is nothing like Kraft, fyi. You might like it for what it is, but don't expect that fake orange cheesiness.

Maybe Dragonfly's bulk uncheese mix? That's the stuff I like best, but it's still not much like Kraft.

Yeah, I've had Road's End. And I honestly don't like it at all. Yes, Mac Daddy is good, as is The New Farm Mac, and I also have my own recipe that I drastically modified from VegWeb, but they aren't Kraft. They're all delicious for a more classic mac n cheese, but lacking in Orange Flavor.

I have tried a ton of fake mac and cheese recipes in all my veg/vegan years and the one I love the best and the one my foggy memory thinks is the most like Kraft is/was...

Even my slowly struggling to vegetarianism hubby loves this one.

I just made this last week, and it was really good. Very easy and tasty. It's not exactly Kraft, but that's a good thing. And, the ways it's like Kraft are the ways that count.

I recently made Susan's recipe on the Fatfree Vegan Kitchen blog, too, and my husband and I both liked it quite a bit. I would definitely recommend it, but yeah, it's not Kraft. Next time I make it, I'll tweak the spices a bit. I found the onion and garlic flavors a bit too strong for my liking. Might go heavier on the mustard powder, too, or use prepared mustard instead.

you would think that sopmething so orange and so nasty (but so awesome) would be easy to recreate, at least at a processing plant. harder in a home kitchen, but still. maybe they just don't think there is a market for it.
i for one would probably subsist for at least a week on vegan kraft mac and cheese.

I lived on Kraft Dinner as kid, I loved it especially the way my grandmother made it with the creamy kind with lots of butter and salt. That sounds so strange reminscing about "home-cooked" Kraft Dinner the way my grandmother made it!

I missed out on a lot of kraft dinner parties while living in residence at university. I know guys that live off of KD and hotdogs.
THe smell when they crack that bag of powder is overwhelming.
This thread interests me.

I eat the 123s and chreese, and not so secretly really like it BUT it's nothing like Kraft. Just the color. Good luck sarchan! I'm curious to know how this turns out.

+1 to all of this. I made it last night and it really was very good. Hmm...I can hardly wait to get home and have another bowlful.

I agree. I love dragonfly's mix! It's not like Kraft, but it is truly delish. I also do love the Road's End 123's and Chreese, but it's not Kraft either. I like it way better than Kraft.

I also made this recently . Next time I might halve or leave out the smoked paprika. Normally I love the stuff, but it just doesn't belong in my mac 'n' cheeze!
I upped the garlic and onion a little and also upped the mustard powder bigtime. I think next time I might up the miso a bit, and add some extra lemon juice to it. A tiny knob of whipped Earth Balance added at the end helped a lot ![]()

I've been trying to come up with a recipe for vegan Kraft, and I've made some progress, but it still needs alot of work. I don't think a nooch base would work that well for a Kraft-like sauce, so I'm just playing around right now.

Just so you know, you can buy big packages of just the roads end cheese mix without the noodles.

the closest i've had to kraft mac and cheese was a spur-of-the moment concoction i whipped up a few days ago. unfortunately, i didn't write it down. boo!
i used follow your heart cheddar and only a couple tablespoons of nooch.
blurry, post-bake:
i'll try to formulate a recipe soon.

I wonder how many packages of easy mac I ate as a teenage vegetarian.

Holy crepe. Write that shiitake down! That looks awesome prebaking. I don't think it would make it to the oven.
