I think I've done it.

I had been planning to experiment with apple sage sausage (like the field roast ones).
Since people were coming, I thought I'd make them be my guinea pigs.... They were not disappointed.  After they left, I made another batch, upped a couple of the ingredients, and these are so good!  I usually don't like seitan by itself, but these kick asparagus.

Recipe:

1 1/2 cups vital wheat gluten
1/4 cup nutritional yeast
1/2 tea. salt
1/4 tea. cloves
1/4 tea. allspice
2 1/2 tea. onion powder
1 tea. ginger
3 tea. sage
1/4 tea. cayenne
1/4 tea. black pepper
1/2 cup dried apples, chopped finely

1/2 cup cold mashed yukon gold potatoes
2 tea. marmite
3 Tb. olive oil
1/2 tea. liquid smoke
1 tea. crushed garlic from a jar
1 Tb. maple syrup
2/3 cup water

Combine dry ingredients in a bowl, mix it up.

Combine wet ingredients in a different bowl, mix it up.

Combine wet and dry ingredients and knead for a few minutes.  Form into little sausage shapes and wrap them up in tin foil tightly.  Steam for 1/2 an hour.  Unwrap them, put some oil in a pan and fry them up a little.  Yummy.

I got it in the baking section of Fred Meyer, it was next to the frosting.?  Not sure why.  I've seen it next to the baking yeast before at another store.

In one of Rose Elliot's books there's a recipe for apple sage sausages (no seitan involved) which smelled heavenly but totally went to mush as they were being cooked. sad I only tried it once 'coz I'm lazy like that. Hmm, but I don't think I've ever seen dried apples around here? :s (and no liquid smoke either... gaaahhh)

Mine don't turn to mush!  They are chewy and yum!  I bet if you used 1/2 a cup of grated apple and used slightly less water it would work.
