so my original goal was to make new years cupcakes that each contained as much alchohol as a shot.
i decided to make chocolate cake from vctotw, and alter the blueberry mousse recipe to contain large quantities of 40 proof liquor, and use it as cupcake filling.
i made the cake batter, and anticipating a big party, doubled it, only to realise i had the one muffin pan, so i made 12 cupcakes and one cake layer in this cool pan shaped to make your baked flipped over cake into the shape of a tart pan, to hold filling.
(this pictures messed up, sorry. put the pieces together in your mind, it will make sence and you will see what im talking about)
then i started on my booze mousse, and lo and behold, i was OUT of the extra firm silken tofu nessasary to making mousse, so i zeroed in on plan B: make booze frosting instead of mousse.
i decided in my mind that maybe, just maybe i could adapt my favorite frosting recipe : one cup soymilk thickened with starch, then mixed with one cup margarine, and one cup powdered sugar. intead of one cup soymilk and one cup sugar, i decided to use 2 boxes hain super fruit vegan jello mix, one half cup raspberry syrup, one half cup silk creamer, cooked to dissolve the mix, and then stirred with one cup of spiced rum.
the creamer, syrup and mix packets ready to go in the microwave:
once they were microwave dissolved, i whisked them into my cup of rum, and set it aside.
in my kitchenaide, i creamed one and a half cups EB shortening and one half cup EB spread. i threw in a bit of liquid soy lecithin, anticipating the large amount of water based material i was about to incorporate, when it got real fluffy, i started adding my rum/jello mix a little at a time, it got pink and cute, and didn't get runny, so i was pleased as pie.
i prepared my cake by brushing a mixture of raspberry syrup and rum on the cake surface, then i piped the fluffy rum stuff in the hole of my cake. i made it look like this:

then i got in my car and drove to my friend breanas house, because she was having a party.
the cake got devoured by a bunch of drunk friends who couldnt believe i had made an alchoholic cake, vegan no less!
it really was tastey. the rum added a "fancy shmancy resturaunt" flavor that makes you feel like you should be dining by candlelight. i had a slice, and i got tipsy, but im a lightwieght, so i doubt it counts.

oh, and i subbed some rum and raspberry syrup for half the soymilk in the cupcake batter, and over did it on the cocoa powder, because too much fell in to the mixing bowl.

Pretty. The frosting looks nice. It makes me really want to use my frosting thing I got for Christmas. I think I'll just cave and make some cupcakes today, but I have nowhere to bring a whole cake.

heres the recipe for the booze frosting, if anyone wants to further this here experiment:
microwave until melted and bubbley(i microwaved a minute at a time and stirred in between.)
half a cup of soy creamer
half a cup of raspberry syrup
2 packets of hain raspberry super fruit mix
whisk microwave mix into one cup of spiced rum
cream:
one half cup EB spread
one and a half cup EB shortening
dash of liquid lecithin
when fat is creamy and fluffy, start adding the rum mixture a quarter cup at a time, mixing inbetween additions.
then add some extra vanilla, raspberry syrup, or whatever.
