Lemon Blueberry Ice Cream Sandwiches

I am hooked on berry picking, and got lots of blueberries this weekend. It has been pretty warm around here, and as soon as I got home I made it my mission to make these Lemon Blueberry Ice Cream Sandwiches! It was quite the project, but so worth it!
