the original plan was to slice the seitan cutlet into 1/2" strips with a knife and then diagonally into shreds, but it was easier to pull it apart with our fingers once in strips -- hence the irregularity of the pieces... tasty, tasty irregularity. wink

agreed -- when I first saw the recipe it sounded like one of those "what omnivores think vegans eat" kinda meals. Thankfully the reality was much tastier!
